Cilantro & Lime Brown Rice

I made cilantro and lime brown rice the other day and it was absolutely delicious. And the best part was that it was super easy to make. I got the recipe from Fit Foodie Finds and I followed it almost to a "t", but I think next time I made it I'm going to modify it a bit. Adding the garlic and the salt (esp. sea salt) at the end didn't make much sense to me. It made for uneven flavor.

My version- serves 4:
Ingredients:

-2 cups brown rice, uncooked
-4 cups water
-1 1/2 limes
-3/4 of a tablespoon of chicken flavor or substitute water with chicken stock
-1/2-3/4 cup fresh cilantro, chopped unpacked
-1 or a small pinch teaspoon sea salt
-1 teaspoon garlic, minced

Steps:

1. In a medium size pot add water with the chicken flavor (or chicken stock),  salt, garlic, and the rice. Set the flame on high and bring rice to a boil, then cover the pot and set it to low. Let all of the water/stock evaporate. Takes about 35 minutes.

2. Let the rice cool for about 20 minutes.

3. Once the rice has cooled- temperature should be warm- add in the lime juice and mix.

4. Add in the 1/2-3/4 of a cup of cilantro, or you can just grab a handful, and mix. I sort of just eyeballed this step.

5. Serve warm

Adding the chicken flavor and cooking the garlic and salt all together makes more sense to me. It also makes for more even flavor.
